Chickpea Soup

So for the first time in years, I actually came down with a little something like a cold. Naima got it from daycare and gave it to me; then I gave it to someone else, and they gave it back to Naima-or something like that. However it went for whatever combination of reasons, after I was recovered, I decided to make a soup for my friend. I had no idea what I wanted to make. Just a healing soup. So what I decided to do was combine a whole bunch of herbs and veggies into a chickpea soup. It came out so yummy too.




The herbs I came up with to include in the soup were: Garlic, Turmeric, Ginger, Onions, Nettles, Cayenne, Astralagus, Oregano, Horseradish, Cumin, and Dandelion root. The veggies were: Carrots, Celery, Kale, Nettles. Everything was organic, with the exception of the vegetable chicken broth. I also added yams, shitake mushrooms, Italian-style turkey sausage, soy protein chorizo style sausage (the meats were organic as well) and a bit of sea salt and a pinch or two of cinnamon. The idea was to add as many healthy compounds as I could.

So here is the process of what I did (because I wasn’t following any recipe nor did I use any measurements):

Soak Chickpeas overnight in water and baking soda (optional). Rinse thoroughly. Boil for about 2 hours or until done. Drain.

Prepare all veggies (wash and chop into edible size).

In pot-sauté all veggies in olive oil. Add chopped kale towards end.

Boil chopped yams (with skin) in little bit of water separately. Just enough to cover them. Add water and yams to veggie pot.

Add herbs and seasonings. (fresh and powdered Ginger, minced dried garlic, astralagus root, turmeric, cayenne, horseradish (I used tincture), Bragg Liquid aminos, nettles, powdered mustard, sea salt, crushed red pepper) etc.

Add Swanson (or other brand) Vegetarian broth. Add pinch of cinnamon. Let simmer.

Brown italian turkey sausage and soy (chizoro style) sausage in pan. Chop and stir into soup.

Voila.

Eat.
